Seven Flipped

Description

You have seven hexagon-shaped mats, each with a red side and a blue side. Starting with the red side facing up, all the mats must be flipped over, but you can only flip exactly three at a time. What is the smallest number of moves it takes to do this? Try it with other numbers of mats. Do you notice any patterns in your results? Can you explain why these patterns occur?
